People Possession – PP Yellow (Pink Bourbon Cake) is a single-origin specialty coffee sourced from the Huila region in Colombia. Grown at an elevation of 1750 MASL, this lot consists entirely of the highly prized Pink Bourbon variety. The cherries undergo an experimental honey co-fermentation process with bananas (Honey Co-Fermented w/ Banana), creating an aromatic blend of natural coffee sugars and rich dessert-like fruit notes.
The resulting cup exhibits a smooth, silky texture and high sugar concentration. The flavor hierarchy opens with rich notes of sweet white chocolate and distinct banana candy, evolving into an elegant, fragrant finish of rose water. Lightly roasted for filter brewing, this lot performs consistently across manual pour-over tools including the Hario V60, Chemex, and AeroPress.
