This Pink Bourbon lot is not blended in-house but crafted at the origin near the El Vergel Estate. It undergoes a meticulous Experimental Honey & Co-ferment process designed to maximize its joyful, fruity complexity.
The beans first rest for two days in sealed bags to deepen their natural sweetness. After depulping, they are fermented with yeast and hints of banana for five days, resulting in a smooth, creamy body and a gentle banana note. The flavor profile is described as a symphony of Candy Bracelet, Cotton Candy, and Pink Cake (Princess Cake) bouncing in a vanilla sky. It is a truly kaleidoscopic coffee, perfect as a vibrant filter brew or a complex, sweet espresso.
