Pikola - Gwatemala Arnoldo Perez - 250g
Arnoldo Perez's Guatemala experience with Natural Champagne processing, fermenting the coffee cherry juice with Champagne yeast, is a true feast for the senses. After hand-harvesting, the cherries are fermented anaerobically with Champagne yeast for 150 hours. This process enhances the coffee's natural sweetness and gives it a delicate, wine-apple acidity. The coffee cherries are then dried on raised African beds for approximately 25 days, with regular turning to ensure even drying and optimal flavor. Arnaldo and his wife decided to build their own processing station, which they completed in six months. They combined their years of expertise with modern processing methods to achieve the best possible results.
